aloo baigan- main course




believe me you will surely like it if you eat brinjal/eggplant.Its one of my easy to make and favourite recipies and i can it a bowl of it witout any roti or rice.


  • Ingredients: for 4 people.
  1. eggplant/brinjal:250 grms.
  2. potato: 2medium.
  3. tomato: 2 small.
  4. dry red chilly- 2 to 3.
  5. fenugreek seeds- 1t spoon.
  6. garlic- 6-8 clove.
  7. garam masala- 1 table spoon.
  8. red chilly powder-1tspoon.
  9. turmeric powder-1tspoon.
  10. Oil- 2 table spoon.
  • Recipe:
Cut brinjal and potatoes into cubes and chop tomatoes into small pieces.next take a wok and put on the flame , add oil and once heaten up add fenugreek seeds, chopped garlic and dried red chillies. once the they start to crackle add turmeric powder saute and now  add all the veggies.
Stir for two minutes,now add garam masala and red chilly powder saute for two minutes add salt and some water say about half  a cup, put on medium flame , cover with lid and let it cook for ten minutes.  dont forget to keep stiring in between. 
wasnt it easy and fast to cook this veggie. and its yumm too.
Once done add some finely chopped corriander leaves and enjoy it with daal rice or roti .
