Aaloo Kulcha





Best paired with Chole kulcha can also be eaten with paneer  or rajma or dal makhani or , or  with any spicy or creamy  north indian vegie.


  • Ingredients:
  1. maida 250 grms
  2. Soda water to knead t flour.
  3. Potato 200 grms
  4. garam masala 1 t spoon
  5. amchur1 t spoon.
  6. Refind Oil.
  7. Green Chilly finely chopped.
  8. Onion 1 big finely chopped.
  9. Coriander finely chopped. 
  • Recipe:
Knead maida (refined flour) with soda water cover it with a cloth and keep it aside for 10 minutes. 
Boil potatoes , peel them and mash them . now add garam masal, coriander, onion, green chilli, amchur and salt in the mixture and mix well . 
Now take a ball of kneaded flour and fill the potato mixture in the same way as in case of stuffed paratha and make ball . Now make  a round paratha and put it on tava and grease it with oil on both side and your kulcha is ready.

'Chole' a very famous dish of north india . It yumm taste and variety of spices leaves a nice flavor in your mouth.


  • Ingredients: for 4 people
  1. Chickpea (kabuli Chana): 500 grms.
  2. Dry Masalas Like:(bay leaves,cloves,black pepper, cinnamon, dry red chilly and jeera).
  3. 3-4 big onions.
  4. 2 medium sized tomato.
  5. 3-4 green chillies .
  6. 2 spoon ginger garlic paste.
  7. 1 Table spoon tea .
  8.  3 table spoon chana/chole  masala .
  9. 1& half table spoon dhania powder.
  10. 1& half table spoon lal mirch powder.
  11. 1 t spoon turmeric.
  12. 1 table spoon Chaat masala.
  13. 1 table spoon kasoori methi.
  14. Refind 3 table spoon.
  15. salt as per taste.
  16.  green Coriander.
  • Recipe:
 Soak Chickpea over night or atleast for 5-6 hours. Now wash and put in a cooker along with all the dry masalas. wrap tea in a cloth make a potli and put it along with now add about 1 table spoon of water and let it boil for upto 6-7 whistles (I like it soft if u want a bit hard reduce t no. of whistles).

Now take a wok (kadhai) and add refined to it switch on t flame and add grinded onions into it once the onion start changing color add ginger garlic paste and saute for some time Now add all the masalas ( garam masala, dhania powder, red chilli & turmeric along with some water and fry it for some time till t masala leave the pan & oil begans to appear on the surface of masala now add grind-ed tomatoes and slitet chillies and saute for 2-3 more minutes .
Now its time to add chick pea and saute for some time , dont throgh the water just take out the tea potli out of it and add the remaining water  & masala of cooker in the wok and close the lid on the wok for some time keep on steering from time to time for next ten minutes. By the end add kassori methi & chaat masala to the chole and switch off the flame. Now decorate it with finally slitted coriander and serve with roti or rice for dinner or add  bhature to it and enjoy chole Bhature.
